Cauliflower Cheese Pasta Bake

INGREDIENTS
- 400g macaroni
- 1 small cauliflower, in florets
- 120g cashews, soaked
- 2 garlic cloves
- 2 tbsp nutritional yeast
- 1 tbsp Dijon mustard
- 40g panko breadcrumbs
- 1 tbsp olive oil

METHOD

Boil the cauliflower
Steam the cauliflower for eight minutes until completely tender.

Blend the sauce
Combine cauliflower, cashews, garlic, yeast, mustard, salt and 350ml water in a blender. Blend until very smooth.

Cook the pasta
Cook the macaroni for two minutes less than the packet time. Drain and combine with the sauce.

Bake
Tip into a baking dish, scatter panko mixed with oil and bake at 200C for fifteen minutes until bubbling and golden.

A pinch of nutmeg in the sauce gives the classic mac-and-cheese aroma.
