Charred Lemon Green Beans

- 500g fine green beans, trimmed
- 1 lemon, halved
- 2 garlic cloves, sliced
- 3 tbsp olive oil
- Sea salt
- Black pepper

METHOD

Heat the pan
Heat a wide pan until very hot.

Char the lemon
Place the lemon halves cut-side down in the dry pan for three minutes until deeply blackened. Lift out.

Cook the beans
Add oil, beans and garlic to the same pan. Cook over high heat for five minutes, tossing, until charred and tender-crisp.

Finish
Squeeze the burnt lemons over the beans and grind over plenty of pepper.
