Fava Bean Crostini

INGREDIENTS

  • 400g podded broad beans (frozen are fine)
  • 1 lemon, zest and juice
  • Small handful fresh mint
  • 3 tbsp olive oil
  • 1 small garlic clove
  • 12 thin ciabatta slices
  • Sea salt
  • Crushed pink pepper

METHOD

Blanch the beans

Cook the broad beans in boiling water for two minutes. Drain and slip the bright green centres out of the grey skins.

Crush

Crush the peeled beans in a bowl with a fork. Stir in lemon zest, juice, torn mint, olive oil and salt.

Grill the bread

Toast the ciabatta slices on a hot griddle pan for two minutes per side until charred lines appear.

Top and serve

Rub the warm bread with the cut garlic, pile on the bean mash and finish with crushed pink pepper.

Save five minutes by skipping the peel — the texture will be slightly grassier but still excellent.
