Garlic Sautéed Spinach

- 500g baby spinach
- 3 garlic cloves, sliced
- 1 small red chilli, sliced
- 3 tbsp olive oil
- Sea salt
- 1 lemon

METHOD

Heat the oil
Warm the oil with garlic and chilli in a wide pan for one minute — flavour the oil but do not brown the garlic.

Wilt
Add spinach in handfuls, tossing constantly. The whole pan should wilt in about three minutes.

Salt
Season with salt as it cooks down — spinach takes more than you think.

Finish
Squeeze with lemon juice off the heat and serve hot.

Drain in a sieve before plating — wet spinach makes everything else soggy.
