Maple Glazed Brussels Sprouts

INGREDIENTS
- 600g brussels sprouts, halved
- 2 tbsp maple syrup
- 1 tbsp wholegrain mustard
- 40g hazelnuts, roughly chopped
- 3 tbsp olive oil
- 1 tbsp tamari
- Black pepper

METHOD

Roast hard
Toss sprouts with two tablespoons of oil and salt. Roast cut-side down at 230C for twenty minutes.

Toast the nuts
Dry-toast hazelnuts in a small pan for three minutes until fragrant.

Glaze
Whisk maple, mustard, tamari and remaining oil into a sticky glaze.

Toss
Tip the sprouts into a bowl with the glaze and hazelnuts. Toss until every sprout is coated.
