Smoky Corn on the Cob

INGREDIENTS
- 4 corn cobs
- 40g vegan butter, softened
- 1 tsp smoked paprika
- 1 lime, zest and juice
- 1 small garlic clove, grated
- Sea salt
- Fresh coriander

METHOD

Mix the butter
Mash the butter with paprika, lime zest, garlic and salt into a smoky paste.

Heat the griddle
Heat a griddle pan until smoking hot.

Char
Brush the corn with the butter and griddle for ten minutes, turning every two minutes, until charred all over.

Finish
Brush with the rest of the butter, squeeze with lime and shower with coriander.
