Spiced Jackfruit Wraps

INGREDIENTS

  • 2 cans (400g each) young jackfruit in water
  • 1 onion, finely sliced
  • 2 garlic cloves
  • 1 tsp smoked paprika
  • 4 tbsp barbecue sauce
  • 4 large flour tortillas
  • 200g shredded cabbage
  • 1 lime

METHOD

Pull the jackfruit

Drain and rinse the jackfruit. Pull each piece apart with two forks until shredded. Discard any tough seeds.

Cook the base

Soften onion in olive oil for five minutes. Add garlic and paprika and stir for one minute.

Sticky finish

Add jackfruit and barbecue sauce with 100ml water. Simmer for fifteen minutes until thick and sticky.

Wrap

Toss cabbage with lime juice and salt. Warm tortillas, fill with jackfruit and slaw.
