Spinach Borek Triangles

INGREDIENTS

  • 250g spinach, washed
  • 1 small onion, finely diced
  • 2 garlic cloves
  • 30g pine nuts, toasted
  • 1 tsp dried oregano
  • 1 tbsp lemon juice
  • 8 sheets filo pastry
  • 4 tbsp olive oil
  • Sesame seeds

METHOD

Wilt the spinach

Sweat onion in a tablespoon of oil for three minutes. Add garlic and spinach and cook until wilted. Drain well and chop.

Build the filling

Stir pine nuts, oregano, lemon juice and salt into the spinach. Squeeze out any extra liquid.

Fold the triangles

Brush a filo sheet with oil, fold lengthways into a strip, place a spoonful of filling at one end and fold flag-style into a triangle.

Bake

Brush the triangles with oil, scatter sesame seeds and bake at 200C for twenty minutes until deeply golden.

Cover unused filo with a damp cloth — the sheets crack the moment they dry out.
