Sweet Pea and Mint Orzo

INGREDIENTS
- 300g orzo
- 300g frozen peas
- 40g fresh mint
- 1 lemon, zest and juice
- 1 small garlic clove
- 3 tbsp olive oil
- 2 tbsp nutritional yeast
- Sea salt

METHOD

Cook the orzo
Boil the orzo in plenty of salted water until just al dente.

Add the peas
Drop the peas into the same pan in the last minute. Drain together, saving a small mug of pasta water.

Blend the dressing
Pulse mint, lemon zest, juice, garlic, oil, yeast, salt and a splash of pasta water to a bright green sauce.

Toss
Tip orzo and peas back into the pan, pour over the dressing and toss off the heat. Loosen with pasta water if needed.
