Sautéed Wild Mushrooms with Thyme

INGREDIENTS
- 500g mixed mushrooms (oyster, chestnut, shiitake), sliced
- 3 garlic cloves, sliced
- 1 sprig fresh thyme
- 60ml white wine
- 3 tbsp olive oil
- Sea salt
- Black pepper

METHOD

Heat the pan
Heat the oil in a wide pan until shimmering — mushrooms must hit hot oil to sear.

Sear hard
Add the mushrooms and cook over high heat for six minutes without stirring, then toss for two more.

Add aromatics
Stir in garlic and thyme leaves for one minute.

Deglaze
Pour in white wine and let it bubble away. Season with salt and pepper.
