Cauliflower Tikka Skewers

INGREDIENTS
- 1 cauliflower in large florets
- 200g coconut yogurt
- 2 tbsp tikka spice mix
- 1 lemon, juiced
- 1 small bunch mint
- 1 small bunch coriander
- 1 green chilli
- 8 wooden skewers, soaked

METHOD

Marinate
Mix yogurt, tikka spice, lemon juice and salt. Coat the cauliflower and rest for thirty minutes.

Skewer
Thread florets onto soaked skewers, three or four pieces each.

Char
Grill on a hot griddle pan for nine minutes per side until charred at the edges and tender at the core.

Make chutney
Pulse mint, coriander, chilli, a little yogurt and salt to a vivid green chutney. Serve alongside.

Soak the skewers in cold water for thirty minutes — they will not burn under the heat.
