Charred Onion Rings

INGREDIENTS
- 3 large red onions, sliced into 1cm rounds
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp brown sugar
- 1 sprig thyme
- Sea salt
- Black pepper

METHOD

Heat the pan
Heat a wide pan with the oil until very hot.

Char the rings
Lay the onion rounds in a single layer. Cook for four minutes per side until deeply blackened.

Glaze
Whisk balsamic, sugar and a splash of water. Pour into the pan and let it reduce for two minutes.

Plate
Lay onions on a plate, pour over the glaze and scatter thyme leaves.
