Gochujang Mushroom Skewers

INGREDIENTS
- 400g king oyster mushrooms, sliced into thick rounds
- 2 tbsp gochujang
- 1 tbsp tamari
- 1 tbsp maple syrup
- 1 tsp sesame oil
- 1 tsp grated ginger
- 2 tbsp sesame seeds
- 1 spring onion, finely sliced

METHOD

Whisk the glaze
Combine gochujang, tamari, maple, sesame oil and ginger in a bowl into a smooth glaze.

Skewer the mushrooms
Thread the mushroom rounds onto eight pre-soaked bamboo skewers, three to four pieces per skewer.

Brush and grill
Brush the glaze generously over both sides. Grill on a hot griddle pan for three minutes per side until charred.

Finish
Brush again with any remaining glaze, scatter sesame seeds and spring onion.
