Marinated Artichoke Skewers

INGREDIENTS

  • 1 jar (280g) artichoke hearts in oil
  • 24 cherry tomatoes
  • 24 fresh basil leaves
  • 1 lemon, juice and zest
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Black pepper
  • 24 short wooden skewers

METHOD

Drain and marinate

Drain the artichokes and quarter them. Toss with lemon zest, juice, olive oil, oregano and pepper. Rest for ten minutes.

Build the skewers

Thread one cherry tomato, one folded basil leaf and one artichoke piece onto each skewer.

Drizzle and chill

Lay the skewers on a platter and spoon over the marinade. Cover and chill for fifteen minutes.

Serve

Bring back to room temperature for ten minutes before serving — cold artichoke loses its flavour.

Drop a tiny piece of preserved lemon on each skewer for an extra zing.
