Smoky Tomato and Bean Pasta Soup

INGREDIENTS
- 200g small pasta (ditalini or orzo)
- 1 can (400g) cannellini beans
- 400g chopped tomatoes
- 1 onion, diced
- 1 carrot, diced
- 2 garlic cloves
- 1 tsp smoked paprika
- 1L vegetable stock
- 2 tbsp olive oil

METHOD

Soften the base
Cook onion and carrot in oil for eight minutes. Add garlic and paprika and stir for one minute.

Build the soup
Pour in tomatoes and stock. Bring to the boil and simmer for ten minutes.

Add the pasta
Tip in the beans and pasta. Cook for the packet time, stirring often so nothing sticks.

Adjust and serve
Loosen with extra stock if too thick. Finish with olive oil and cracked pepper.
