INGREDIENTS

  • 1 can (400g) chickpeas, drained
  • 60g breadcrumbs
  • 1 small onion, grated
  • 2 garlic cloves
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 4 burger buns
  • 4 tbsp tahini
  • 1 lemon, juiced

METHOD

Crush the chickpeas

Mash the chickpeas in a bowl with a fork β€” keep some texture. Stir in breadcrumbs, onion, garlic and spices.

Form the patties

Shape into four firm patties. Chill for ten minutes.

Pan-fry

Cook patties in olive oil over medium heat for four minutes per side until deeply browned.

Build

Whisk tahini and lemon juice with a tablespoon of water into a sauce. Toast the buns and assemble with patty, sauce, lettuce and tomato.
