Spiced Chickpea Burgers

INGREDIENTS
- 1 can (400g) chickpeas, drained
- 60g breadcrumbs
- 1 small onion, grated
- 2 garlic cloves
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 4 burger buns
- 4 tbsp tahini
- 1 lemon, juiced

METHOD

Crush the chickpeas
Mash the chickpeas in a bowl with a fork β keep some texture. Stir in breadcrumbs, onion, garlic and spices.

Form the patties
Shape into four firm patties. Chill for ten minutes.

Pan-fry
Cook patties in olive oil over medium heat for four minutes per side until deeply browned.

Build
Whisk tahini and lemon juice with a tablespoon of water into a sauce. Toast the buns and assemble with patty, sauce, lettuce and tomato.
