Tofu Tikka Masala

INGREDIENTS
- 400g firm tofu, cubed
- 200g coconut yogurt
- 2 tbsp tikka spice mix
- 1 onion, diced
- 3 garlic cloves
- 20g ginger, grated
- 400g chopped tomatoes
- 200ml coconut milk
- 2 tbsp olive oil

METHOD

Marinate the tofu
Toss tofu with half the yogurt, half the tikka spice and salt. Rest for thirty minutes (or overnight).

Char
Cook the tofu in a hot pan for two minutes per side until charred at the edges. Set aside.

Build the sauce
Soften onion in oil for five minutes. Add garlic, ginger and the rest of the spice. Stir for two minutes.

Simmer
Pour in tomatoes and coconut milk. Simmer for fifteen minutes. Stir in tofu and remaining yogurt.
VEG.ARMY TIP
Tikka spice mix is just garam masala plus paprika and cumin — combine your own if needed.
